Blues in Beverages: Unlocking the Next Generation of Natural Color

As brands navigate a rapidly evolving color landscape, blue has become one of the most compelling and technically challenging hues in beverage formulation. Once dominated by synthetic dyes like Blue 1 and Blue 2, blue is now being reimagined through naturally derived solutions that align with clean-label expectations and modern beverage formats.

At NURA, we support brands transitioning to natural blue colors without compromising vibrancy, stability, or formulation flexibility. Three sources are shaping the future of blue beverages: Gardenia Blue, Butterfly Pea Flower Extract, and Spirulina Blue.

Natural Blue Color Sources for Beverages

Gardenia Blue: Stability Meets Clean-Label Appeal

Gardenia Blue is derived from Gardenia jasminoides fruit via the naturally occurring compound genipin, which is polymerized to create a deep blue color suitable for beverage applications. As the most recently approved natural blue color additive, the U.S. Food and Drug Administration authorized Gardenia (genipin) Blue in August 2025 for use in beverages and candies.

Known for strong performance in acidic systems, Gardenia Blue also offers excellent heat stability. For beverage and RTD formulations, it provides a stable, modern alternative to synthetic blue dyes while supporting clean-label positioning and consistent color expression.

Butterfly Pea Flower Extract: Interactive and Visually Distinct

Butterfly Pea Flower Extract comes from the petals of Clitoria ternatea and is valued for both stability and visual impact. It maintains color integrity through heat processing and delivers a saturated blue that performs well in still and sparkling beverages. Its naturally occurring pigments allow for shade modulation, enabling blues that shift toward violet or magenta depending on formulation conditions.

Commonly used in botanical beverages, lemonades, and functional drinks, Butterfly Pea Flower Extract supports storytelling around natural sourcing and visual transformation, making it a strong option for brands seeking differentiation.

Spirulina Blue: Proven Performance with Defined Use Cases

Spirulina Blue is derived from the edible algae Arthrospira platensis and delivers a bright, clean blue with reliable performance in many beverage systems. It offers strong clarity and color intensity, particularly in neutral to mildly acidic formulations.

However, spirulina blue can be more sensitive to highly acidic environments and aggressive heat processing, which may limit its use in certain low-pH or high-temperature applications. Careful consideration of pH, processing, and storage conditions is important to ensure optimal stability. Its long history of use reinforces spirulina’s role as a trusted natural blue option when formulation conditions are well controlled.

Taken together, these blue sources offer complementary strengths: Gardenia Blue as the newest FDA-approved option with strong acid and heat stability, Butterfly Pea Flower Extract as a versatile botanical blue with shade flexibility and visual intrigue, and Spirulina Blue as an established solution best suited for controlled formulation conditions.

Why Blue Matters: Expanding the Natural Color Palette

Natural blue solutions play an important role beyond blue itself. In formulation, blue serves as a foundational color that enables a broader range of naturally derived shades, including greens, purples, and deeper browns that are often difficult to achieve with single-source ingredients.

Many green pigments lack stability once removed from their original plant structure, limiting their usefulness in beverages. By blending stable natural blues with other botanical colors, formulators can achieve consistent, visually appealing shades that perform under real-world processing and shelf conditions.

With dependable blue sources such as Gardenia Blue, Butterfly Pea Flower Extract, and Spirulina Blue, brands gain greater creative flexibility while maintaining clean-label and regulatory alignment.

The Future of Blue Beverages

As demand for clean-label products continues to grow, blue is no longer limited to synthetic solutions. Gardenia Blue, Butterfly Pea Flower Extract, and Spirulina Blue give beverage brands new creative freedom to build visually striking products that meet both performance and labeling expectations.

At NURA, we’re proud to support beverage innovators as natural color continues to unlock new possibilities.
